Fall Recipe Spotlight
Ingredients
When the air turns crisp and leaves
start crunching underfoot, nothing
says “fall comfort” like a warm,
flavorful dish that comes together
quickly. This skillet recipe balances
savory chicken with the sweetness
of apples and the spice of
cinnamon for a cozy dinner that
tastes like autumn on a plate.
2 tablespoons olive oil
4 boneless, skinless chicken
breasts (or thighs for extra
flavor)
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon ground cinnamon
1 medium onion, thinly sliced
2 crisp apples (like Honeycrisp
or Fuji), thinly sliced
2 cloves garlic, minced
½ cup chicken broth (or apple
cider for a sweeter twist)
1 tablespoon Dijon mustard
Optional garnish: fresh thyme
or rosemary
Directions
1.Season & Sear: Sprinkle chicken with salt,
pepper, and half the cinnamon. Heat olive oil
in a large skillet over medium heat and sear
chicken for 4–5 minutes per side, until golden
brown. Remove from skillet and set aside.
2.Sauté the Flavors: In the same skillet, add
onion slices and cook 2 minutes until soft. Stir
in apples and garlic, cooking until apples begin
to caramelize (about 3 minutes). Sprinkle with
remaining cinnamon.
3.Create the Sauce: Whisk chicken broth (or
cider) and Dijon mustard together. Pour into
the skillet, scraping up any browned bits for
flavor.
4.Finish Cooking: Return chicken to skillet.
Simmer everything together for 5 minutes
until the chicken is fully cooked and sauce
slightly thickens.
5.Serve: Plate chicken topped with the apple-
onion mixture, drizzle with pan sauce, and
garnish with fresh thyme or rosemary.
